Denis (gilthead seabream) is one of the Mediterranean's most prized table fish, named for the golden band between its eyes. It feeds over sand and seagrass and enters lagoons in spring, crushing shellfish with powerful teeth. Caught on shrimp, mussel and ragworm fished on the bottom, and widely farmed in Egypt.
